A milk shortage in Hanoi had forced a bartender in Metropole to find a substitute and so ca phe trung (egg coffee) was born. The late Mr. Giang, the founding father of Giang cafe, was the bartender in question. Egg coffee then gained so much love from Hanoians that Mr. Giang decided to run his own coffee shop. Egg coffee is neither slimy nor sickly but more like vanilla. It comes in hot and cold version and the cold one bears a striking resemblance to coffee ice-cream.
